$2 for a can of organic coconut milk at wegmans; $1.50 and 10 minutes time to make it at home! I’m all about saving anywhere I can! Plus I know the only ingredients are coconut and water. I can be in control of what is added to it! I know there aren’t any extra ingredients or any preservatives, BPA due to packaging or anything else!
You will need:
- 1 cup Organic shredded unsweetened coconut
- 1 ½ cups of water
- Measuring cup
- Cheese cloth
Take 1 cup of organic shredded unsweetened coconut and pour in the blender with 1 cup of water. Blend on high for 2-3 minutes.
While it is blending, fold cheese cloth into quarters and spread over a bowl that can hold at least 1 ½ cups of liquid.
The yield is about 1 ½ cups of coconut milk about the same amount as 1 can.
I usually prepare this 1-2 days before I’m going to use it, just to make dinner prep easier. I wouldn’t store this for longer than 1 week in the fridge although I’ve never stored it for longer to see if it would spoil.
