Chocolate Birthday Cake

And even though we are well into August I’m still sharing recipes from Tonchi’s birthday which was in mid July!  There were way too many recipes to share all at once and if I would have put them all in one post, then some of them would have gotten missed!  Also, each and every one of these recipes is so good they each deserve a post of their own!  So read on and see what you think!

This recipe Lexie was kind enough to share on her blog… so once again I will not have the recipe in my post, but will have the link!  The recipe is found on Lexie’s blog called Lexie’s Kitchen.

I have posted a photo of the cake here, but her photos are so much better than mine! Hers are beautiful and make the cake look and taste incredible.  If you look at her pictures long enough or if you are craving chocolate enough I’m sure your mouth will start to water!

I did add some whipped cream to the top of our cake like an icing.  For Aisling I whipped the fat portion (that floats to the top) of a can of coconut milk.  It wasn’t quite as light and feathery as real whipped cream, but she liked it!  I do recommend doing one or the other to cut the rich chocolate taste.  We all like chocolate, but since we don’t eat a lot of desserts around here anymore, we aren’t used to the heavy thick rich flavors we once were!

It’s truly amazing!  Is this even a cake? I can vouch that it is!  Lexie does say that it serves 4 -6 and I would even venture to say it could feed 8 or maybe 10.  I had about ⅓ of the cake and I could barely finish it, since it was so rich.  A smaller slice would have been perfect… and it HAS to be served with coffee even if it is July or August with no air conditioning (we don’t use ours except for dire emergencies – only had it on 3 days so far this year).

I also found in her recipe she calls for ½ cup rinsed, drained, soaked and cooked black beans.  I found it took a little more than 1/8th cup of dried beans to equal a ½ cup once they are rinsed, drained, soaked and cooked!

  1. I made this last Friday. I had to use too big of a pan, so my cake was flatter. I didn’t have full-fat coconut milk on hand to make the whipped cream, but I didn’t find the cake to sweet by itself (not having refined sugar hasn’t seemed to cure my sweet tooth). It definitely had a fudgy consistency. Even my non health conscious brother liked it. (He still doesn’t know it contained black beans!)
