Poor Man’s Crab Cakes

This is one of our newest recipes; but is quickly becoming one of our favorites. We have had it multiple times and it’s just as good if not better each time! Who can afford to have crab cakes every few weeks! Certainly not us! 😉 I’m sure that is true of so many!  The Old Bay seasoning in these makes a big difference. Mmm Yummy! I hope you enjoy as much as we do! 

Old Bay seasoning doesn’t have MSG in it and I’ve listed the ingredients in it in case you’d just like to mix your own! I’m not sure of the ratios, but I’m willing to bet that a combo of these spices would taste spectacular. So… it includes: Celery salt, dried mustard, red pepper, black pepper, bay, cloves, allspice, ginger, cardamom, cinnamon and paprika.

One other note… I’m not usually a huge fan of zucchini, especially if it is cooked by itself. I will eat it, but just not one of my favorite foods. You would never hear me say “Oh look! It’s zucchini! I can’t wait!” Unless, that is, it’s this recipe! So whether you like zucchini or not, give this recipe a try, I really think you will like it!

In the process of cooking

Original Recipe
1.5 cups shredded zucchini, squeezed dry (about 2 very small zucchinis)
1 cup panko
2 TBSP grated onion
2 TBSP all- purpose four
1 TBSP mayonnaise
1 tsp Old Bay seasoning
2 large eggs
Vegetable oil
Garnish: sour cream

In large bowl, combine zucchini, bread crumbs, onion, flour, mayonnaise and Old Bay. Add eggs, stirring to combine. Shape mixture into 10 even patties.

In a large skillet, pour enough oil to make a thin layer in bottom of skillet. Heat the oil on medium-high. Cook patties in hot oil, in batches if necessary, for 1 to 2 minutes per side, or until lightly browned. Garnish with sour cream and shredded zucchini if desired. Serve immediately.

Alternate Recipe – Grain/Gluten Free, Dairy Free
1.5 cups shredded zucchini, squeezed dry (about 2 very small zucchinis)
1 cup shredded unsweetened coconut
2 TBSP grated onion
2 TBSP coconut flour
1 TBSP mayonnaise
1 ½ TBSP Old Bay seasoning
2 large eggs
Coconut oil

Then follow instructions listed above…

Garnish: instead of sour cream, can use any type of dip you’d like. My boys really like hot sauce on theirs. Could also try any type of salad dressing! If you come up with additional ideas I’d love to hear!

  1. I’m definitely giving these a try. I love crabcakes but I’ve been allergic to crab for the past decade so I’ve really missed them. These look like a good alternative… and a great way to eat more veggies, too!
