This is a great side salad or main dish for summertime! I try to use the oven the least amount possible in summer and this is a great option. It is definitely a light dinner if you use it as a main dish, but I have a hard time serving it as a side since it has meat in it. I do really like it though for a side salad to take to a picnic or pot luck!
I really like the flavors and how they mix… the raisins give it a little sweetness, the bacon adds salt and I just love the fresh taste of raw broccoli! Besides if you are using good quality bacon… mmmmm… need I say more??? SO tasty! If I don’t chase the rest of the family out of the kitchen when I’m cooking the bacon, the plate would be empty before I even fry the last piece!

Raw Broccoli Salad
2-3 medium sized broccoli crowns
6 pieces of bacon
1 cup raisins
1 small onion chopped
½ cup fermented mayo
1 TBSP vinegar
½ tsp salt
Put about 2 cups of water on the stove to boil. While waiting on the water fry the bacon and let cool.
Chop the broccoli into very small pieces. Just think about making it small enough so that you could eat the salad with a spoon.
Once water is boiling, remove from the heat and add raisins. Let soak for about 10-15 minutes or until raisins are swollen and soft.
Mix all ingredients together, chill and serve!
