Curried Lentils

I just found this!  I wrote this about 4 years ago and somehow it never got posted! So I’m going to post it now!  I do remember having these, actually!  But now to make them again!  Also the photo is actually from some lentil soup I made last night!  I couldn’t find the original photo. So if you make it, it won’t look exactly like this!

This evening I was late starting dinner and even then I had no idea what I was going to make. I was feeling very uninspired. I found some sausages in the freezer that I pulled out and had some potatoes in the closet that I cut up into wedges and broiled… but what else to have. That was definitely not going to be enough for my famished boys. I had some salad ingredients, but we are having friends over for a salad bar on Wednesday and I kinda need it for that. Turkey Day Food

I couldn’t post this on Thursday or before since I hadn’t made it and didn’t know exactly what I was going to make too far in advance! However… The food was delicious even though I was only responsible for 3 different sides! Thanksgiving foods tend to be traditional in that families have their tried and true…. but these recipes are still great foods for any day of the week or for Christmas which will be here before we know it! Italian Summer Salad

I have LOTS of veggies on had after getting our CSA share yesterday, and not a lot of anything else on hand for lunches! Lard Fried Cauliflower with Dill

So now we are getting lots of cauliflower from the CSA… so there will be a few more of these recipes too! This head we got this week was yellow and beautiful! Grilled Eggplant with Tomatoes Basil and Feta

We have eggplants coming out our ears and I’ve been trying to find creative ways to eat them! I’m usually not a huge fan, although I’ve found that salting them helps to remove some of the bitterness and adds flavor! The texture was something my kids had to get used to, but this recipe was a huge hit for them! We also really like our eggplant pizza crust, but I’m always looking for more ideas! Recently I’ve been itching to purchase some [amazon_link id=”B001ELLBJS” target=”_blank” container=”” container_class=”” ]Great Lakes Grass Fed Beef Gelatin[/amazon_link] because of all the health benefits (post on this coming soon) it offers and for it’s many uses. I’ve especially been wanting to make some marshmallows for the kids to enjoy over a campfire and not worry about the high fructose corn syrup and food coloring in them (yes… even though they are white, they still have dyes!)
