We just love the corn tortillas hat Trader Joes sells. They have four ingredients (corn, lime, water and salt). We usually have quesadillas once or twice a week even though it isn’t paleo! It’s easy and on school days or busy days it’s fast and easy and ready in seconds and is always a hit! Continue reading “Southwestern Breakfast Casserole”

Gluten and Dairy Free Baked French Toast
This recipe isn’t exactly paleo, but I needed a new gluten free option for breakfast and french toast is a common request. This recipe really turned out great the the kids really enjoyed it! Post-Thanksgiving Mashed Potato Patties
I know it’s a bit past Thanksgiving, but I did make these the week after our delicious meal! My sister had copious amounts of leftover mashed potatoes that she didn’t want to keep and my mother in law delivered us a LARGE package of leftover mashed potatoes as well. It seemed we had them coming out our ears! Continue reading “Post-Thanksgiving Mashed Potato Patties”
Old Fashioned Cottage Cheese
Unfortunately I had an entire ½ gallon of raw milk that went sour. I really didn’t want to dump it out, didn’t have the cultures to try making cheese and a few of my kids can’t have it at all, so I couldn’t try putting it in baked goods. So what to do with it? Continue reading “Old Fashioned Cottage Cheese”
Canning Strawberry Jam
As many of you know we live in a small town home (1000 sq ft/2 bedrooms for a family of 6) with minimal storage. Consequently I store most of my home canned goods in my mother-in-law’s basement which is only about 20 minutes away. We are often there to visit and I just pick up what I need when we visit. Continue reading “Canning Strawberry Jam”
Grain-free, Egg-free, Dairy-free Paleo Gingerbread
For some reason I’ve been craving gingerbread even though it’s spring and no where near gingerbread season.. .if there is such a thing! I was on a hunt for a good recipe. I wanted something a little sweet and a little spicy! Continue reading “Grain-free, Egg-free, Dairy-free Paleo Gingerbread”
Sausage Spinach Quiche
I LOVE quiche! So light, and yummy! I remember my Mom serving it with a bowl of warm soup on a cold day! It’s been a bit chilly here in northern Virginia for springtime! So this was just the thing. We’ve had the heat turned off since it warms up in the afternoons…usually! But last night it was in the 30s! So the house wasn’t quite so warm this morning! Even by this afternoon I needed something to help heat things up! I tried drinking a cup of warm tea, but it wasn’t enough to warm me up! Continue reading “Sausage Spinach Quiche”
Pumpkin Pancakes
Usually we are late to church on Sundays and it drives me crazy. We seem to get out of the house in a reasonable amount of time any other day of the week, but on Sundays we can’t seem to make it! Church doesn’t even start until 10am! Continue reading “Pumpkin Pancakes”
Almond Coconut Cookies
I haven’t made cookies in the [amazon_link id=”B001P2FUZC” target=”_blank” container=”” container_class=”” ]dehydrator[/amazon_link] or crackers in a while and thought it was high time to do it again. I wanted something somewhat sweet, but also coconutty. I mixed and threw in a little of this and a little of that and they were super fantastic! The kids love them and we will definitely be doing these again! Continue reading “Almond Coconut Cookies”
