Paleo Quick Pickle Beets

As spring is here and summer quickly approaches, so is the need for some recipes to help store and enjoy the produce that will soon be coming our way! We were part of a CSA last year and we are doing it again this year. (Our house is going to be a drop site, so let me know if you are interested in more info)  As is the nature of a CSA there is often A LOT of one type of produce that arrives all at one time! Lard Fried Cauliflower with Dill

So now we are getting lots of cauliflower from the CSA… so there will be a few more of these recipes too! This head we got this week was yellow and beautiful! The kids loved looking at it and kept asking me to make sure it really was cauliflower! So cute they even know it’s supposed to be white and that it garnered that much attention from them! Apple Date Dip

Eggplant and zucchini season have about passed, and we are also coming to the end of the apple season… however, I still have a bushel of apples sitting on my counter! I’ve already made some apple butter (I’ll post about that soon) and a little bit of applesauce and now I’m working on dried apples. Continue reading “Apple Date Dip”

Paleo Vegetarian Lasagna

Yes, you read that right! RARELY is there a recipe with paleo and vegetarian in the title. It’s kinda hard to do as a main dish! Just about the only things they have in common are most veggies and fruits… kinda tough to make a dinner with just that! But it has been done! Continue reading “Paleo Vegetarian Lasagna”

Grilled Eggplant with Tomatoes Basil and Feta

We have eggplants coming out our ears and I’ve been trying to find creative ways to eat them! I’m usually not a huge fan, although I’ve found that salting them helps to remove some of the bitterness and adds flavor! The texture was something my kids had to get used to, but this recipe was a huge hit for them! We also really like our eggplant pizza crust, but I’m always looking for more ideas! Grain-free, Egg-free, Dairy-free Paleo Gingerbread

Pumpkin Pie Icy

After naps today it was warm, a bit humid, sunny and we all needed a snack… but we all wanted a “treat” as the boys like to say.  As we were talking about what that treat might look like they were running through options that typical kids would think of, but, of which, we had none on hand.  Tonchi wanted gum or candy and Koa wanted chocolate.  Aisling would have been happy with whatever sweet she was given, grapes probably would have done it for her, but she is happy to go along with the boys… most of the time! Apple Butter Pumpkin Pie with Ginger Bread Crust

My mother-in-law purchased the best pumpkin pie I had ever tasted at the local farmer’s market.  I love pumpkin pie anyways, but this was a little piece of heaven! It was so delicious I was determined to recreate it as best I could.  I gave it an attempt for Thanksgiving and it was a hit.  I’ve had multiple requests for it and there weren’t any leftovers!  Below is the recipe I’ve pieced together from all over.
