I couldn’t post this on Thursday or before since I hadn’t made it and didn’t know exactly what I was going to make too far in advance! However… The food was delicious even though I was only responsible for 3 different sides! Thanksgiving foods tend to be traditional in that families have their tried and true…. but these recipes are still great foods for any day of the week or for Christmas which will be here before we know it! Plantain Crackers

I’m always looking for a new snack that isn’t too costly, doen’t take a lot of work to prepare and can easily be substitute for a desired convenience snack. For example my kiddos often want some sort of cracker or chip from the snack food isle at the grocery store. I try to avoid that isle at all costs, but sometimes you just gotta go down it! Coconut Wraps


A friend turned me onto these coconut wraps a few months ago!  They are great!  They are so much better than any gluten free option for wraps.  They fold and bend well and don’t easily crack.  They are thin and great for veggie or sandwich wraps.  The only downside to them is that they are pricey.  They run about $5.99 for 4 wraps.  CRAZY when it’s less than $2 for eight flour tortillas!  Actually it’s a little sickening to think of it that way. Banana Bread: Grain-free, sugar-free, dairy-free

This recipe is AMAZING (in my opinion)!  Dear hubby wasn’t as much of a fan, but he really likes banana bread with LOTS of sugar and LOTS of chocolate chips.  So this recipe certainly isn’t the “banana cake” that he likes!  I still thought it was so good and I’ve made it twice this week!  The kids really like it too!  We had an overabundance of over ripe bananas and this was a great use for them!  I’ve had so many recently that I think I have two gallon sized Ziploc bags in the freezer full and ready for smoothies!  I didn’t want to add to the overcrowding issue in my freezer and was determined to find another use that tasted great! Coconut Bread

We love bread!  And we miss bread!  Because Brian isn’t supposed to be having grains I’ve been trying to remove it from most of what we eat on a daily basis.  I didn’t realize how much grain, starches, and sugars we eat until I started removing it.  We didn’t regularly have desserts, I don’t buy sugary cereals or snacks, never buy cookies, so it should be easy right?  Nope… try again!
