Coconut Wraps

A friend turned me onto these coconut wraps a few months ago!  They are great!  They are so much better than any gluten free option for wraps.  They fold and bend well and don’t easily crack.  They are thin and great for veggie or sandwich wraps.  The only downside to them is that they are pricey.  They run about $5.99 for 4 wraps.  CRAZY when it’s less than $2 for eight flour tortillas!  Actually it’s a little sickening to think of it that way.

This particular brand is the only one I know of and I found it at My Organic Market (MOM).  They have a plain version and also a curry one, which is super fantastic!  After I became addicted after only trying them once I was determined to figure out how to do it on my own.  When I looked at the ingredient list on the back of the package I noticed the only ingredients were coconut and water… how hard could it be?

Well, let me tell you I tried all sorts of things with only one that worked.  I will tell you that it CAN NOT be done with [amazon_link id=”B000KENKZ8″ target=”_blank” container=”” container_class=”” ]coconut flour[/amazon_link] and coconut oil.  I’ve tried and wasted a lot of both.  It was very sad.  I guess I learned I wasn’t able to do it that way, but still very sad to have to throw food out.

But let me tell you of SUCCESS!  Sweet, sweet success!  Both literally and figuratively.  I did some searching around on the web and found a few different ways that were suggested and found out they were right and it actually worked!  Surprise, surprise!

I purchased a young coconut and carefully opened it.  I made sure to try and keep the coconut water as clean as possible and carefully poured it into a jar or glass to save for later.  Then with a spoon scrape all the soft coconut meat out of the shell.  Place all of the meat into a blender (of course I prefer my [amazon_link id=”B000RRKQKA” target=”_blank” container=”” container_class=”” ]Vitamix[/amazon_link] for this!!!)  and add just enough of the coconut water to make it blend easily.  It should be a little thicker than coconut milk.

Then pour the mixture on silpat sheets or parchment paper (Another thing I learned… wax paper DOESN’T work) and place in the dehydrator (another of my preferences: the [amazon_link id=”B001P2FUZC” target=”_blank” container=”” container_class=”” ]Excalibur[/amazon_link] – most amazing machine ever!).  I’ve tried a few shapes and sizes and now have a few favorites!  You can make them square, rectangles and/or large or small circles!  We found that smaller circles worked best and also work great for little hands!  I can usually fit 4 or 5 smallish circles on one dehydrator tray.

I do recommend keeping a close eye on these as they dry as they can be over dried and get crispy and brown.  If they aren’t dry enough, they will still be soft or gooey in the center.  When they poured onto the trays it is very important to try and smooth them out evenly as much as possible.  I found that tilting the tray around, shaking it back and forth and tapping it on the counter worked best.  If you find another way, please let me know!

This is also a great way to get kids involved in the kitchen as well.  There are so many things they can do to help with this project!  Scoop the coconut meat, push the [amazon_link id=”B000RRKQKA” target=”_blank” container=”” container_class=”” ]Vitamix[/amazon_link] buttons, put the trays in the [amazon_link id=”B001P2FUZC” target=”_blank” container=”” container_class=”” ]dehydrater[/amazon_link], turn the [amazon_link id=”B001P2FUZC” target=”_blank” container=”” container_class=”” ]Excalibur[/amazon_link] on, etc.  My kids also enjoy checking on them as they dry and discussing if they are done or not!  It’s fun to watch them turn from creamy white to almost clear.

We use these all the time in this house!  All my kids will eat them, although sometimes they opt to do with out!  We’ve used them for everything, from hamburgers, to chicken salad, to veggie wraps!  They also have a bit of a sweet flavor which I find enjoyable and adds a little something to plain veggies! 😉
