Pork Tikka Masala

I know, I know. Chicken Tikka Masala is the dish… not pork. But I started making the dish and didn’t have chicken, but I did have pulled pork in the freezer! It had some liver mixed in, but no seasonings added… perfect. It made making this dish that much simpler. Continue reading “Pork Tikka Masala”

Rendering Lard

Lard!!! LARD!!! You may say… that’s what most people say when they hear we cook with lard. “Don’t you know that stuff ‘ll kill ya’!” “That’s what my mama cooked with back in the day.” “Your a nurse and you use saturated fats?” Continue reading “Rendering Lard”

Warm Spinach Salad with Cooked Pork and Mustard Vinaigrette

As greens are still being harvested by the bunches I’m always looking for a new way to serve them as the CSA is filling my fridge to overflowing with greens, greens and more greens! Even my salad lover, Tonchi, made the comment this last week “Salad again?!” And that is a rarety for him. He will often take seconds on salad over a hot dog or sausage or other scrumptious foods! He LOVES his greens! Continue reading “Warm Spinach Salad with Cooked Pork and Mustard Vinaigrette”

Southwestern Breakfast Casserole

We just love the corn tortillas hat Trader Joes sells. They have four ingredients (corn, lime, water and salt). We usually have quesadillas once or twice a week even though it isn’t paleo! It’s easy and on school days or busy days it’s fast and easy and ready in seconds and is always a hit! Continue reading “Southwestern Breakfast Casserole”

Paleo Pizza Peppers

Paleo Pizza… how can it be? Paleo by definition means no carbs or no grains and no dairy, so how in the world could you even attempt to create anything that even resembles pizza and be paleo at the same time? Continue reading “Paleo Pizza Peppers”

Broiled Pork and Pineapple

This dish was absolutely fantastic. As you’ve heard me bemoan the fact that I’ve been less than inspired lately, this meal hit the spot. Not only that, but the entire family raved about it. The kids had been announcing the fact they were SO SO SO hungry for the last hour before we ate. Must have been true! They licked the entire bowl of pork, pineapple, scallions and rice completely clean! I was pleasantly surprised. Continue reading “Broiled Pork and Pineapple”

Char Siu (Roasted Chinese BBQ Pork) and Cucumber Salad

It’s been a while since I’ve posted any recipes for dinner that are super fantastic.  I’ve posted other food stuffs, but no new dinner ideas.  I have made a few, but nothing worthy of posting here.  I’ve been less than inspired lately and have resorted to some older recipes and haven’t been ultra motivated to come up with something new or alter something inspiring. Continue reading “Char Siu (Roasted Chinese BBQ Pork) and Cucumber Salad”

Sausage Stroganoff

This dish has long been a favorite of mine, but was no where near paleo with lots of butter, cream, noodles, and other no nos! I’ve not only paleoized this classic dish and I must say the results were fantastic! Continue reading “Sausage Stroganoff”

Paleo Cauliflower Pizza Crust

I did post a cauliflower pizza crust a little over a year ago, but it had LOTS of cheese in it which tasted fantastic… but not really on our diets these days! the middle two kiddos can’t have any dairy, Tonchi can only have raw dairy and Brian and I can have limited raw dairy! Quite a list to remember… and poor baby Xanthie doesn’t stand a chance. Of course only 6 weeks into her life we aren’t sure if she has any allergies, but we will find out soon enough I’m sure! Continue reading “Paleo Cauliflower Pizza Crust”

Dessert for Dinner

This post is a little late coming out, but a week and a half ago we had our last day of school for this year!  Since we are homeschooling, we weren’t going to have a graduation, but I still wanted to do something special. Continue reading “Dessert for Dinner”
