Chocolate Pudding

This girl has a VERY NEW BEST friend!  You could probably say I’m a chocoholic, but in recovery!  I enjoy it on occasion, but I definitely don’t always have it on hand.  I saw a recipe for pudding that didn’t call for any dairy or eggs and it was chocolate!  WOW!  Who ever thought… When I first saw the recipe I thought “Who would ever try that?  There is no way that is even remotely close to real chocolate pudding… not the box stuff.. but real homemade grandma’s pudding!”  

I couldn’t have been more wrong!  I decided I had an extra avocado on hand and would give it a try and if it turned out it would be a sweet treat for the kidos after dinner tonight.  Well… let me tell you, there may not be any left for the kidos tonight!

I have a bowl (I was going to say little bowl, but I figured I’d be honest…) sitting next to me as a write and probably have a chocolate mustache just like a kid… from licking my lips trying to get the last bit, but in reality just pushing it to the outer edges of my lips!

I can’t rave about this recipe enough.  I wish I could say I came up with it, but that would be a lie and I don’t want to take someone else’s credit.  This is definitely worth giving credit where credit is due!  I found it on the Tropical Traditions Coconut Recipe page and it was submitted by Ann from Green Bay, WI.  I wish I could meet this Ann and thank her!  And see if she would give me a peek into some other healthy chocolate recipes she may have!

Well… I’m sure you are on the edge of your seating NEEDING to know what is in this recipe that I’m declaring so decadent!  Take a peek!  Don’t judge it before you try it… like I said… there may not be any left in the bowl by the time kids get up from their afternoon naps, much less for dinner!


Chocolate Pudding
(That is the name given it on the Tropical Traditions page, but I think I would probably call it something like Devilish Chocolate Mousse or Thick and Creamy Dark Chocolate Delight)

Ingredients:
2 ripe avocados
½ cup raw honey
½ cup cocoa powder (I used [amazon_link id=”B001E5E0Y2″ target=”_blank” container=”” container_class=”” ]cacao powder[/amazon_link] and since this isn’t heated the health benefits aren’t lost!)
2 TBSP coconut oil melted (I’m sure you could use butter, lard, palm oil, or something similar)
1 tsp vanilla extract

Puree all ingredients in [amazon_link id=”B000RRKQKA” target=”_blank” container=”” container_class=”” ]Vitamix[/amazon_link] or other type blender until smooth.  And enjoy!


I think this would also be fabulous with whipped cream and strawberries on top, or with a fresh cup of coffee! Mmmmm
