Roasted Garlic Lemon Broccoli

I think I’ve mentioned it before, but I’m not one for complex side dishes unless the main dish is something like hamburgers or fish on the grill.  I only like a max of 1 labor intensive (30 minutes or less of prep work) portion to a meal.  As it is I feel like I live in the kitchen and I definitely don’t need to add to that!  Thankfully my family doesn’t mind!

Don’t get me wrong, I do love good food, but I aim to have delicious food in record time.  Box mac and cheese, stove top and hamburger helper DO NOT come close to even being counted as delicious food and wouldn’t be found anywhere near my house… actually… it probably is pretty close since we live in a town house and our neighbor is single and in college!  Oh well!  I do what I can! 😉

So on to today’s recipe.  Simple sides are a must and this one definitely works!  It’s simple, fresh and perfect for summer meals.  I do cook it in the oven, but in a grill pan would work just as well!

Roasted Garlic Lemon Broccoli

Ingredients:

2 head of broccoli, chopped to desired size
2 tsp coconut oil
1 tsp celtic sea salt
½ tsp freshly ground pepper
3 cloves of garlic chopped (doesn’t need to be fine)
1 tsp freshly squeezed lemon juice

Instructions:

  • Heat oven to 400 degrees
  • Toss first five ingredients together and spread in even layer on a baking sheet.
  • Bake to desired tenderness.  It usually takes about 15-20 minutes if the broccoli is cut up in kid sized bites.
  • Remove from oven.
  • Sprinkle with lemon juice and serve!
