No CSA delivery this past week because of the 4th of July holiday. Many of my friends were wondering why… this isn’t a big holiday… however… it is a big holiday! Our Nation’s birthday! And our farmer has been working hard for us to eat delicious foods! So shouldn’t he get a day off? By cutting out deliveries for the week maybe he can have a few hours off to enjoy good food and good friends and family! I think it’s worth it!!!
So… since there is no CSA post this week I thought I would post a recipe that we all enjoyed and gobbled up! These are perfect for summer! They aren’ sickening sweet, they are light and refreshing and you don’t have to turn the oven on to make them… you do need a dehydrator, though. I even put mine outside to keep every little bit of heat out of my kitchen!
The kids helped me this time and had a blast. Apparently they have never seen me zest a lime or lemon and they thought it was crazy that I would put the peal in the cookies! However, it made quite the impact because they all tried to eat their orange rinds that day at lunch! They finished a few bites and then decided they would just eat the fruit and forget about the rind!

We really enjoyed a bag of these and I figured they couldn’t be too hard AND we could change the flavor a little! I thought vanilla and lime ought to be tasty and refreshing on a warm summer day! And I think I was right! You will have to be the judge of that!
My kids have voted “We NEED to make these EVERY day!” They emphatically proclaimed after a taste. And then proceeded to tell me they needed to taste another one to make sure they are all that good! HA! Do I have blond hair?? Uhh… yes I do… but I didn’t fall for that! They have been taking lessons from their father! Sneeky, Sneeky… but I didn’t cave!
We’ve rationed them and even now I’m thinking of making a new batch in the morning!
Raw Vanilla Lime Cookies
- Zest from 1 lime
- Juice from 1 lime (about 1 TBSP)
- 1 cup raw shredded unsweetened coconut
- ¾ cup blanched almond flour
- 1 TBSP vanilla
- 2 TBSP maple syrup
- ½ tsp salt
- 1 TBSP coconut oil
- Mix all ingredients together
- Shape into cookies (I like the disc shape)
- Dehydrate on 135 degrees for about 3-5 hours
- I think they taste best when they are dried on the outside, but still gooey and moist on the inside
Makes about 30 cookies
Let me know what you think! As many of you know my kids really aren’t picky eaters at all. I often use them to judge my cooking, but sometimes I think it isn’t fair because they really will eat almost anything put on their plates!
