Who doesn’t like strawberry shortcake?
My son’s birthday was last week and of course we had to have cake! I told him I would make him special cupcakes and asked what he wanted. Of course any 4 year old little boy is going to want a robot right? How does he even know what that is? Oh well… So here is a photo of what was produced with some help from the book [amazon_link id=”054724181X” target=”_blank” container=”” container_class=”” ]”What’s New, Cupcake?”[/amazon_link] that I’ve talked about before.
He was pretty tickled and so was I… but that was for his birthday celebration with family and friends the weekend before his birthday. Yes, it was VERY unhealthy and ALL sugar! So poor hubby could’t have any.
So when Tonchi’s real birthday rolled around I wasn’t too enthused to try another creation. I did want a special dessert, but didn’t want to put hours into it. Nor does a 4 year old boy need two different birthday cakes! I also wanted something that dear hubby could enjoy as well.
Something with fruit would be good… Something not too sweet… something easy… STRAWBERRY SHORTCAKE it is!
This recipe I found on the Tiana website which sells a lot of organic, fair trade coconut products. There is a whole list of amazing recipes to try! I’ll certinally be back there again soon to try out something else. The following recipe is the first I’ve tried and it was a great hit! I definitely liked it better than the sugar infused robot!!! Hubby these little cakes with strawberries on top. The rest of us had home whipped cream on it, which was delish!
Ingredients
¼ cup sifted coconut flour
3 tablespoons coconut oil, melted
3 eggs
3 tablespoons honey
¼ teaspoon salt
¼ teaspoon vanilla
¼ teaspoon baking powder
Method
Blend together oil, eggs, honey, salt and vanilla. Combine coconut flour with baking powder and whisk into batter until there are no lumps. Pour batter into greased muffin cups. Bake at 205 Degree C (400F) for 15 minutes. Serve topped with fresh strawberries and whipped cream. Makes 6 cakes.
Everyone… including the non-health-conscious really like them too! Try them out and see for yourself!
We made these into a trifle with coconut sugar-free whipped cream. It was delicious!!
