Curried Mixed Nuts with Kaffir Lime and Cayenne

These are AMAZING!  OMG!!!  I could eat these anytime!  Sweet to curb the sweet tooth and salty to cure those cravings too!  We loves these for game nights, sitting and chatting with friends or an evening snack before bed.  These are modeled off of Trader Joe’s Chili Lime Spiced Mixed Nuts which are OUT OF THIS WORLD!  Unfortunately I can’t afford to be buying these each week, so I HAD to find a substitute.  If you’ve never had these nuts you are definitely missing out!  Or maybe you would be better off not trying them!After looking high and low for a decent recipe I came across this older post on Hogwash blog. Man, these are awesome!  I made these for all the guys in our family for Christmas this year and they were a huge hit!  Anytime we have visitors over and they are tasted the recipe is usually requested!

Curried Mixed Nuts with Kaffir Lime and Cayenne
Makes 1 pound mixed nuts (I would double it if you can!  They are THAT good!)
2 tablespoons unsalted butter
1/4 cup honey
2 tablespoons sugar
1 teaspoon Kosher salt
1 teaspoon curry powder
1 teaspoon ground cumin
1/2 to 1 teaspoon (to taste) cayenne pepper
1/2 teaspoon granulated garlic
Grated zest of 3 Kaffir limes
1 egg white
1 pound raw, mixed nuts
Sea salt, to finish
Preheat the oven to 375 degrees. Line a baking sheet with parchment paper or a silicon baking mat, and set aside.
In a small saucepan, melt the butter, honey, and sugar together over medium heat. Remove from the heat, stir in the salt, curry, cumin, cayenne, garlic, and lime zest, and set aside.
In a large bowl, whisk the egg whites until frothy. Add the nuts, and stir to coat. Add the butter and spice mixture, and stir until evenly coated. Transfer the nuts to the prepared baking sheet, spreadin them in an even single layer.
Bake on the middle rack of the oven for 12 to 15 minutes, turning occasionally, or until glazed and shiny and deeply colored. Remove from the oven and sprinkle lightly with sea salt. Stir again, then let cool completely on the pan. Store in an airtight container.

    1. I think I found them once at Grand Mart, but since then I’ve just used regular limes and just used more than it called for. I think I’ve even used lemon once too with good results.
