Almond Milk Shakes

 

Thankfully it’s warming up here in the DC metro area! I LOVE summer and warm weather! I really enjoy all things summer, no school, pool time, bright sunshine, lots of outside activities, letting kids run and yell outside as much as they want, planting gardens, eating fresh produce and my list could go on forever I feel!

Even in pregnancy and especially towards the end I LOVE IT!!!! It’s just nice to get outdoors!

This afternoon the kids and I were just sitting under our gazebo on the patio enjoying the 80+ degree weather and nice sun and a craving hit me! I really wanted something a bit sweet, definitely cool, and creamy sounded nice too! I didn’t want to do dairy since I’m limited in how much I can consume and I had some already with breakfast. Iced coffee definitely sounded good, but I’d had my caffeine intake for the day too! 😉

So I started looking around and grabbing a bit of this and a little of that! I let the kids give me a few ideas of what to add and this is what we came up with!

Almond Milk Shakes

¼ cup boiling water
6 dried dates
1 raw farm fresh egg
3 cups almond milk
6 TBSP almond butter
2 or 3 tsp of ground cinnamon
15+ cubes of ice

Add the boiling water and dried dates together and let them soak for about 20 minutes.
Mix the next four ingredients with the soaked dates in the blender and puree well.
Add enough ice and blend to make it thick and cold – think milkshake consistency.

It hit the spot and we all wanted more! 😉 I felt good about drinking it and getting the benefits from the nuts and raw egg. I also knew it would help to fill the bellies of my kiddos who always seem to be a bottomless pit!
