Last week a dear friend and I got the rare (although would like for it to not be so rare!) opportunity to have a mama date and get dinner together! It’s amazing how much conversation can happen when kids aren’t running around under your feet! It was such a precious time to connect, share our hearts and encourage each other. I was SO grateful for the time!
When it came time to order I chose the special. It was amazing and melt in your mouth delicious! The combination of the cooked spinach with blue cheese and lemon on salmon was amazing! My mouth is watering even as I think about it!
When I got home that night I told Brian about it and he was disappointed that I didn’t bring any left overs! I actually finished every bite! And I knew fish isn’t so tasty as leftovers, but I’m sure he would have enjoyed a few bites before bed! The next morning the kids also needed a detailed explanation of what I had to eat and if I liked it! It isn’t often that I eat out, without them!
Their response, “Not fair!” I want some of that fish! Well… I had salmon in the freezer, so I did some thinking and put this recipe together. It turned out quite good. Definitely not as amazing as Bonefish, but it was super yummy and everyone in the family LOVED it! In fact, after they finished what was on their plate they were arguing over who got the rest of the cooked spinach! What is wrong with these kids and what brainwashing did their parents do to them?!?!
So I figured I’d share a new favorite in our home! I’m sure we will be making it again soon!!!
Baked Salmon with Spinach and Blue Cheese with Lemon Sauce a la Bonefish Grill
- 2 lbs Salmon Filet
- 1 Lemon
- ¼ cup maple syrup
- 1 bag of fresh spinach
- 2 tsp Garlic Powder
- ½ tsp salt
- 1 TBSP Coconut oil
- 2 TBSP crumbled blue cheese
- Preheat oven to 350 degrees.
- Cut filet in half.
- Generously season with salt and pepper.
- Wrap each filet separately in tin foil and bake in the oven for 30 minutes
- Cut fresh lemon in half and squeeze out the juice
- Pour in a small sauce pan
- Add Maple syrup
- Simmer about 25 minutes and reduce by at least half.
- Place fresh spinach in iron skillet.
- Add about 3 TBSP water, garlic powder, salt and coconut oil.
- Put a lid over it.
- Simmer until spinach is wilted.
- Remove lid and continue to simmer until soft and all water has been cooked off.
Plate the salmon with spinach and blue cheese on top with about 1 tbsp of the glaze drizzled over top. Serve with two veggies. We had asparagus and roasted dill carrot strips.
