Broccoli and Carrot Salad

A few days ago we needed a little something, preferably a green something added to dinner. This salad was created by adding a little of this and a little of that and it turned out quite nicely… in fact, it was even better the next night as the lime flavor marinate the veggies!

Another huge plus, is that it was so simple to make and so delicious! All of the kids really enjoyed it too, which is another plus! I’m always looking for new salad ideas, especially in summer. I’m thinking of making this again with a lime marinade on some chicken. Grill the chicken and add it to the salad for a protein rich salad that would be good for a pool dinner!

Broccoli and Carrot Salad

Ingredients

1 ½ cups julienned carrots

2 cups chopped baby broccoli

Large handful of Cilantro – chopped

⅓ cup green onions chopped

Dressing:

1 cup Paleo Mayonnaise

Juice of 1 lime

1 tsp coriander

⅛ tsp Cayenne

2 tsp cumin

Salt and pepper to taste

Instructions:

Mix all the salad ingredients together. Mix up the dressing and add as much dressing to the salad as desired. We used all of the dressing, but some may not like as much as we did!

We do usually make our own mayonnaise and I’ve posted the recipe in the past. It’s simple to make and lasts a week or two in the fridge. It is kinda a pain to make it so frequently, but it’s also nice to make it and not have it as another item to get off my grocery list!
