Apple crisp has always been one of my favorite desserts. I’ve been wanting to paleoize it, but just haven’t gotten around to it. This version still isn’t paleo, but it’s getting closer! I didn’t have a lot of time to ‘fix’ this recipe this week, but knew I could easily change it enough that it fits our diets.
I remember when I was a kid, my grandmother would serve this as a side for dinner! And since it was for dinner we could have seconds! My Mom NEVER did that! It was always a dessert in our home! And it’s still a dessert here! Mimmy still serves it as a side for dinner and I still have seconds when she does that! Yes, still a kid at heart… or addicted to sweets, but I prefer the first option!
1-3lb bag of apples
1.5 cups of gluten free rolled oats
¼- ⅓ cup of melted coconut oil (or oil of choice)
⅓ cup [amazon_link id=”B001E5DZIO” target=”_blank” container=”” container_class=”” ]sucanat [/amazon_link](although honey or maple syrup would probably be a fine substitute)
Core and chop the apples. The smaller the apples are the quicker they will cook. I usually use my [amazon_link id=”B001DLTD1C” target=”_blank” container=”” container_class=”” ]apple pealer, corer, slicer contraption[/amazon_link], but this time the apples were so small that I would have lost half of it. I didn’t even peal them this time and it turned out fine. No one complained about it!
Mix the last three ingredients together and sprinkle over the top.
Bake for about 45 minutes to 1 hour at 350 or until apples are tender

This still makes my mouth water, just to think about how yummy this is! Sometimes my grandmother adds cranberries to it which is good, but she uses A LOT more sugar than I do, so mine would be a bit tart… I’ve also added strawberries or rhubarb, blueberries or any other berry for that matter! The options are endless!
