Banana Bread: Grain-free, sugar-free, dairy-free

This recipe is AMAZING (in my opinion)!  Dear hubby wasn’t as much of a fan, but he really likes banana bread with LOTS of sugar and LOTS of chocolate chips.  So this recipe certainly isn’t the “banana cake” that he likes!  I still thought it was so good and I’ve made it twice this week!  The kids really like it too!  We had an overabundance of over ripe bananas and this was a great use for them!  I’ve had so many recently that I think I have two gallon sized Ziploc bags in the freezer full and ready for smoothies!  I didn’t want to add to the overcrowding issue in my freezer and was determined to find another use that tasted great! Roasted Red Pepper, Walnut and Tahini Party Dip

We have Bible Study tonight and I’m in charge of snacks. What in the world am I going to bring? My husband can’t have dairy, starches, sugar, corn or soy, another lady can’t have gluten, eggs or dairy, and yet another can’t have certain fruits or nuts. What in the world could be a good snack for a lot of people (probably 20 or more), healthy, yummy and that most people can eat? Usually I think of sweet snacks for Bible Study, like coffee cake, cookies, scones, cakes, crackers and all other sorts of starches! Canning – Part I – Peaches

My mom got me a bushel of peaches last week and I was so excited!  I still am!  They are so good!  So sweet and juicy!  Perfect for a cool summer dessert!  If you’ve never had an orchard peach you are missing out!  I purchased a few peaches as a treat last week from the grocery store and it was such a disappointment.  They were hard, grainy and had no flavor.  These were just the opposite! A Great Snack: Homemade Gluten Free Crackers and Yogurt Cheese

With hubby’s new diet I’ve really missed snack foods, especially crunchy things! And no, carrot sticks don’t cut it.  I have found this recipe and it’s been a huge hit and it totally satisfies my need!  Also since these crackers are made out of egg and nuts they are quite filling, so you really don’t feel the need to eat a lot of them and consequently they last longer!  I’m not able to blow through them all in one sitting unlike a box of crackers! Banana Boats

I think this blog will quickly be a lot about food. That is our lives these days! A few weeks before Thanksgiving, last year, Brian was told that he was intolerant to corn, soy, dairy and gluten and he should also not be eating any grains or sugars. He has had a history of high cholesterol and triglycerides since before we got married. Since he is adopted we don’t know any of his family history so therefore don’t really know if this is genetic or not. Since we got married in 2005 we have eaten pretty healthy compared to mainstream Americans, but for him that hasn’t been enough. We have since changed our diet significantly and you will be able to enjoy some of the recipes we have worked so hard to modify for him to enjoy as well.
