Birth of Avi Tobias Mintz

Avi (God is my Father) Tobias (God is good) Mintz

was born this January 5, 2015 at 6:02pm.
He was only 21 weeks 2 days.

He never took his first cry, he never got to see his papa’s face or know his mama’s love, but he is with Jesus and that love is a much greater love for him and for us.

We are sad and mourn his loss. His life was way too short. It wasn’t meant to be this way. He is perfect in everyway and we will miss him.

Family Christmas Letter 2014

Dear friends and family,

Each year I start a letter to send out and never get it completed. I also usually have a photo to attach and even that doesn’t get sent out. I plan on sending it via email, even though it’s much more fun to get mail… so this year I’m starting earlier than normal and REALLY hoping it actually gets sent! Merry Christmas!

May God richly bless your Christmas Day! May your celebration be very special and enjoyed with family and friends. Remember the reason for celebrating… that by the miraculous virgin birth of Christ Jesus and His death and resurrection we now have an everlasting hope. Hope that pervades our days, provides rest for our nights and strength for each new day and year.

May God richly bless you!

Taking a short break from blogging and will see you in the new year! Blessing to you and your family!

Christmas Craft Ideas

Each year I make a decent number of Christmas gifts. Some years are more elaborate than others and sometimes everyone gets something handmade and other years just a few people. Sometimes I make a huge variety of items and some years it’s just a lot of one or two ideas. Continue reading “Christmas Craft Ideas”

Mac n’ Green Ginger Coconut Sauce

I’ve been tired of the same old, same old for lunch lately. I’ve gotten stuck in a rut having the same thing over and over. The kids don’t seem to mind, but I do! Also, I’m really looking for GOOD food and I’m just stora eating lunch to get me through til dinner, but not really enjoying it. Continue reading “Mac n’ Green Ginger Coconut Sauce”

Left Over Turkey – What to do with it!

Two week ago we celebrated Thanksgiving with our Bible study and we were in charge of the turkey. I cooked a 27lb bird for 16 adults and 18 kids… we ended up with LOTS of leftovers! I’m not complaining! We had some for dinner that week and I froze some for future use! Continue reading “Left Over Turkey – What to do with it!”

Turkey Day Food

I couldn’t post this on Thursday or before since I hadn’t made it and didn’t know exactly what I was going to make too far in advance! However… The food was delicious even though I was only responsible for 3 different sides! Thanksgiving foods tend to be traditional in that families have their tried and true…. but these recipes are still great foods for any day of the week or for Christmas which will be here before we know it! Happy Thanksgiving

I just wanted to post a short and sweet note to wish you a special day filled with joy, thankfulness and family!

I know some of you may not be able to spend the day with loved ones who are far away or who are no long with you in this world. As Believers we can be thankful that one day… on That Day… we will meet again. Those loved ones will be in our arms and embraces once again!

I pray that your day is special and filled with joy!

Salmon Cauliflower Pasta Bowl

I know the CSA was last delivered over 2 weeks ago, but I still have some cauliflower left in the fridge… .and I have no idea what to do with it. Usually we just roast it in the oven until it’s tender and the edges are nicely browned. However, for some reason my kids have decided they no longer like it that way and prefer to have it some other way. Continue reading “Salmon Cauliflower Pasta Bowl”
