Our Vacation in Photos!

We had a wonderfully relaxing and enjoyable beach vacation with friends.  It was so much fun!  Thankfully we had lots of sun even if it was a little on the cool side!  We did lots of eating, napping(for the kids!), walking and soaking up the sun!

Grilled Eggplant with Tomatoes Basil and Feta

We have eggplants coming out our ears and I’ve been trying to find creative ways to eat them! I’m usually not a huge fan, although I’ve found that salting them helps to remove some of the bitterness and adds flavor! The texture was something my kids had to get used to, but this recipe was a huge hit for them! We also really like our eggplant pizza crust, but I’m always looking for more ideas!
