Poor Man’s Crab Cakes
This is one of our newest recipes; but is quickly becoming one of our favorites. We have had it multiple times and it’s just as good if not better each time! Tortillas are back!
Brian LOVES enchiladas and I do too and so do the kids! So… I was on a mission to figure out how I could make that possible. So I stumbled upon this recipe for grain-less tortillas! They are actually more like the consistency of crepes and could be used as such, but better than nothing! I did make the enchiladas and they were quite tasty. It was a lot of work since the meat had to be precooked, beans presoaked, coconut milk made, tortillas made and then assembled. It did turn out delish, but I’m not about to make this on a weekly basis!
What is all the hype about Kefir?
Water Kefir? (Traditionally pronounced ke-feer, but often spoken as kee-fer in the West.) What language are you speaking? It is said the word Kefir comes from the Turkish word Keif describing a state of feeling good. This is a GREAT healthy drink that is overflowing with beneficial bacteria, comparable to a probiotic! It is SO easy to prepare and tastes great. If you let it ferment for long enough it gets a natural carbonation and my boys call it their “soda”! I’m tickled that they get so excited to have their “soda” as a treat and have no idea what everyone else thinks is soda! I have also made Kombucha with which kefir is often compared. I don’t prefer it as much as the kefir and I feel like the kefir is much easier to prepare and flavor as well. (I will post more on Kombucha later.) Make your own Organic Coconut Milk for less!
$2 for a can of organic coconut milk at wegmans; $1.50 and 10 minutes time to make it at home! I’m all about saving anywhere I can! Plus I know the only ingredients are coconut and water. I can be in control of what is added to it! I know there aren’t any extra ingredients or any preservatives, BPA due to packaging or anything else! Coconut Bread
We love bread! And we miss bread! Because Brian isn’t supposed to be having grains I’ve been trying to remove it from most of what we eat on a daily basis. I didn’t realize how much grain, starches, and sugars we eat until I started removing it. Banana Boats
I think this blog will quickly be a lot about food. That is our lives these days! A few weeks before Thanksgiving, last year, Brian was told that he was intolerant to corn, soy, dairy and gluten and he should also not be eating any grains or sugars. He has had a history of high cholesterol and triglycerides since before we got married. Since he is adopted we don’t know any of his family history so therefore don’t really know if this is genetic or not. Since we got married in 2005 we have eaten pretty healthy compared to mainstream Americans, but for him that hasn’t been enough. We have since changed our diet significantly and you will be able to enjoy some of the recipes we have worked so hard to modify for him to enjoy as well.
