Recently I’ve been itching to purchase some [amazon_link id=”B001ELLBJS” target=”_blank” container=”” container_class=”” ]Great Lakes Grass Fed Beef Gelatin[/amazon_link] because of all the health benefits (post on this coming soon) it offers and for it’s many uses. I’ve especially been wanting to make some marshmallows for the kids to enjoy over a campfire and not worry about the high fructose corn syrup and food coloring in them (yes… even though they are white, they still have dyes!) Kung Pao Chicken Tacos

Brian opened his own business doing tree trimming and removal this past winter and calls his company Zacchaeus Tree Service (let me know if you have any work for him!  His website is still a work in progress).  I’m so proud of him! I will say I wasn’t his greatest cheerleader in the beginning.  I like to have money in the bank for a rainy day and starting a new company was not going to help that!  I was and am nervous.  There are times there is NO work and consequently no income.  This leads me to stress and worry.  Thankfully I have a great job that always has extra hours and pays well, so when that happens I usually try to pick up some extra work to try and make up the difference. Paleo Grasshopper Pie

Apple Crisp

Apple crisp has always been one of my favorite desserts.  I’ve been wanting to paleoize it, but just haven’t gotten around to it.  This version still isn’t paleo, but it’s getting closer!  I didn’t have a lot of time to ‘fix’ this recipe this week, but knew I could easily change it enough that it fits our diets.

I remember when I was a kid, my grandmother would serve this as a side for dinner!  And since it was for dinner we could have seconds!  My Mom NEVER did that!  It was always a dessert in our home!  And it’s still a dessert here! Mimmy still serves it as a side for dinner and I still have seconds when she does that!  Yes, still a kid at heart… or addicted to sweets, but I prefer the first option!

Apple Crisp
1-3lb bag of apples
1.5 cups of gluten free rolled oats
¼- ⅓ cup of melted coconut oil (or oil of choice)
⅓ cup [amazon_link id=”B001E5DZIO” target=”_blank” container=”” container_class=”” ]sucanat [/amazon_link](although honey or maple syrup would probably be a fine substitute)

Core and chop the apples.  The smaller the apples are the quicker they will cook.  I usually use my [amazon_link id=”B001DLTD1C” target=”_blank” container=”” container_class=”” ]apple pealer, corer, slicer contraption[/amazon_link], but this time the apples were so small that I would have lost half of it.  I didn’t even peal them this time and it turned out fine.  No one complained about it!

Mix the last three ingredients together and sprinkle over the top.

Bake for about 45 minutes to 1 hour at 350 or until apples are tender

Eat and enjoy!

This still makes my mouth water, just to think about how yummy this is!  Sometimes my grandmother adds cranberries to it which is good, but she uses A LOT more sugar than I do, so mine would be a bit tart…  I’ve also added strawberries or rhubarb, blueberries or any other berry for that matter!  The options are endless!
