Timothy Egan

It’s actually overtime for another book review.  I have been reading, but not as much as I had hoped!  We have had LOTS going on around here and unfortunately it’s been cutting into my reading time. However… I’ve finished a book!   Continue reading “The Worst Hard Time: The Untold Story of Those Who Survived the Great American Dust Bowl”

Reclaiming Desert Lands

More and more land is becoming barren and seemingly unusable all over the world. It was thought that over grazing and global warming were the major causes. However, no herds are there, no wildlife and the natural habitat is dying off. It was thought it was due to over grazing, but even US National Parks are having this problem and there isn’t any domesticated grazing and the wildlife is somewhat controlled.

What could be causing this?

Allan Savory has been studying this phenomenon for years and has seen dramatic results with his research and land recovery programs. It’s simply amazing and provides MUCH hope for future generations and for feeding the world’s populations.

I highly recommend taking 20 minutes to watch this Ted Talk. Simply amazing! Check it out!

Hot Crab Dip

Last week we were short on lunch ideas and I was hoping to find a can of tuna in the closet to make some tuna salad for the kids. It was a no go. We were overdue for a grocery trip, but so busy with fun things to do that we hadn’t made it out! Continue reading “Hot Crab Dip”

Dinner Plans for a Month

Recently with the Holistic Mom’s Group there have been some recent diet changes in some families and some removing gluten and there has been a lot of chatter about what are good and easy meals to make, how to grocery shop, what are popular ingredients, what brand gluten free flour is good, etc.

Paleo Grasshopper Pie

I was craving mint and ice cream and all things sweet on Sunday and it was driving me crazy!  Brian was so kind to offer to go out and get ice cream for his prego wife… however, I’m not supposed to be eating too much dairy and the kids can’t have it at all.  It made me feel guilty just thinking about having something that I can’t share with the kiddos.   Continue reading “Paleo Grasshopper Pie”

Blogs Can Be SO Misleading

I’ve been thinking lately how I can feel insignificant, or like a failure or intimidated by other mama bloggers out there who seem to have it all together and have the perfect family life, with amazing photos!  Looking at someones blog always gives the impression that their life is perfect or that even in the crazy times it still turns out funny.   Continue reading “Blogs Can Be SO Misleading”

Grain-free, Egg-free, Dairy-free Paleo Gingerbread

For some reason I’ve been craving gingerbread even though it’s spring and no where near gingerbread season.. .if there is such a thing! I was on a hunt for a good recipe. I wanted something a little sweet and a little spicy! Continue reading “Grain-free, Egg-free, Dairy-free Paleo Gingerbread”

Dessert for Dinner

This post is a little late coming out, but a week and a half ago we had our last day of school for this year!  Since we are homeschooling, we weren’t going to have a graduation, but I still wanted to do something special. Continue reading “Dessert for Dinner”

Apple Crisp

Apple crisp has always been one of my favorite desserts.  I’ve been wanting to paleoize it, but just haven’t gotten around to it.  This version still isn’t paleo, but it’s getting closer!  I didn’t have a lot of time to ‘fix’ this recipe this week, but knew I could easily change it enough that it fits our diets.

I remember when I was a kid, my grandmother would serve this as a side for dinner!  And since it was for dinner we could have seconds!  My Mom NEVER did that!  It was always a dessert in our home!  And it’s still a dessert here! Mimmy still serves it as a side for dinner and I still have seconds when she does that!  Yes, still a kid at heart… or addicted to sweets, but I prefer the first option!

Apple Crisp
1-3lb bag of apples
1.5 cups of gluten free rolled oats
¼- ⅓ cup of melted coconut oil (or oil of choice)
⅓ cup [amazon_link id=”B001E5DZIO” target=”_blank” container=”” container_class=”” ]sucanat [/amazon_link](although honey or maple syrup would probably be a fine substitute)

Core and chop the apples.  The smaller the apples are the quicker they will cook.  I usually use my [amazon_link id=”B001DLTD1C” target=”_blank” container=”” container_class=”” ]apple pealer, corer, slicer contraption[/amazon_link], but this time the apples were so small that I would have lost half of it.  I didn’t even peal them this time and it turned out fine.  No one complained about it!

Mix the last three ingredients together and sprinkle over the top.

Bake for about 45 minutes to 1 hour at 350 or until apples are tender

Eat and enjoy!

This still makes my mouth water, just to think about how yummy this is!  Sometimes my grandmother adds cranberries to it which is good, but she uses A LOT more sugar than I do, so mine would be a bit tart…  I’ve also added strawberries or rhubarb, blueberries or any other berry for that matter!  The options are endless!

I hope you enjoy!

Just Smile!

My dear hubby took this photo last night and I just LOVE it, so I had to share! 😉  Our tradition for Sunday evening dinner is green smoothies and popcorn (thanks to a dear friend for this idea!).  It gives me a day off for making dinner and it’s simple, predictable and loved by all.  As you can see Aisling is enjoying her smoothie and putting on a show for her brothers, who always seem to encourage her crazy antics!

Hope this gives you a smile to start off your week!
